Ingredients

  • 350g Organic Italian Pasta (fusilli or farfalle work beautifully)
  • 1 jar Bio@Us Organic Basil Pesto
  • 100g Organic Cherry Tomatoes
  • 1 jar Organic Artichoke Hearts, drained and quartered
  • 50g Organic Pine Nuts
  • 100g Organic Parmigiano-Reggiano, freshly grated
  • Extra Virgin Olive Oil from Sicily

Additional Ingredients:

  • 1 organic zucchini, diced or spiralized
  • 1 organic yellow bell pepper, thinly sliced
  • 2 cloves organic garlic, minced
  • Fresh organic basil leaves for garnish
  • Salt and freshly ground black pepper to taste
  • Red pepper flakes (optional, for heat)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While the pasta cooks, toast the pine nuts in a dry skillet over medium heat until golden brown, about 3-5 minutes. Watch carefully as they can burn quickly. Set aside.
  3. In a large skillet, heat 2 tablespoons of our Sicilian Extra Virgin Olive Oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the zucchini and bell pepper to the skillet and sauté for 3-4 minutes until slightly softened but still crisp.
  5. Add the quartered artichoke hearts and cherry tomatoes, cooking for another 2 minutes until the tomatoes begin to burst slightly.
  6. Reduce heat to low and add the drained pasta to the skillet with the vegetables.
  7. Add the jar of Bio@Us Organic Basil Pesto and toss everything together. If the mixture seems dry, add a splash of the reserved pasta water to create a silky sauce.
  8. Season with salt, freshly ground black pepper, and red pepper flakes if desired.
  9. Serve immediately, topped with toasted pine nuts, freshly grated Parmigiano-Reggiano, and torn basil leaves.

  • 300g Organic Carnaroli Rice
  • 1 Organic Sicilian Lemon (zest and juice)
  • 100ml Organic Extra Virgin Olive Oil from Sicily
  • 50g Organic Parmigiano-Reggiano, freshly grated
  • 1 jar Organic Vegetable Stock Concentrate
  • 1 bunch Organic Fresh Basil

Additional Ingredients

  • 1 organic yellow onion, finely diced
  • 2 organic zucchini, diced
  • 1 organic red bell pepper, diced
  • 2 cloves organic garlic, minced
  • 120ml dry white wine (optional)
  • Salt and freshly ground black pepper
  • Fresh herbs for garnish

👩‍🍳 Instructions

  1. Prepare 1 liter of vegetable stock and keep warm.
  2. Heat olive oil in a pan. Add onion and sauté until translucent (5 min).
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add rice and toast for 2–3 minutes while stirring.
  5. Add white wine (if using), let it absorb fully.
  6. Add warm stock one ladle at a time, stirring constantly.
  7. After 10 minutes, add zucchini and bell pepper.
  8. Continue adding stock until rice is creamy and al dente (18–20 minutes).
  9. Remove from heat and stir in lemon zest, juice, olive oil, and Parmigiano.
  10. Season with salt and pepper. Let rest for 2 minutes.
  11. Garnish with basil and serve immediately.
